The 3 Angles Refers To The Seat Angle Usually 30 Or 45 Degrees And An Angle Above And Below (Usually 60 For The Bottom But Depending On The Seat Angle The Top One Will Vary) To Make The Seat A Consistent Width As Well As Aiding Flow Around The Valve.
